You can make potato chips in the microwave.  It is hard to believe; but, it is true.  This recipe is super easy (it takes about 10 minutes of prep and cooking), relatively healthy (only 2 teaspoons of olive oil), and they really do taste like regular potato chips.

Thinly slice a russet potato – a mandolin is really useful here.  In a medium size bowl, toss the potato slices with a teaspoon or so of olive oil.  Add a bit of salt.  Spray a microwave-safe plate with cooking spray.  Lay the potato slices on the plate in a single layer.  Microwave for 5-7 minutes (depending on the heat of your microwave).  Peel off the plate with a spatula.  Add a bit more salt.

And, like magic, you have potato chips.  It is hard to believe; but, once you try this recipe you will be hooked.

Microwave Potato Chips

1 pound of potatoes

2 teaspoons of olive oil

2 teaspoons of salt

cooking spray

Slice potatoes very thin using a mandolin.  Toss potatoes with olive oil and salt.  Spray cooking spray on a microwave safe dish.  Put potatoes on the dish in a single layer.  Cook in microwave for 5-7 minutes.  Add a bit more salt and enjoy.
